Just because we're vegan doesn't mean we can't enjoy Cinco de Mayo festivities...here are a few of our favorites.

Cinco de Mayo

To be historically correct, Cinco de Mayo is NOT Mexican Independence Day. It IS, however, a celebration of the Mexican army’s small-yet morale-boosting victory over France at the Battle of Puebla during the Franco-Mexican War back in 1862.

Details aside, this is a real-life example of regular people v. the Man, David v. Goliath, weak v. strong – and ultimately the underdog shines through. This is the kind of story we all love. And because the Mexican army was led by a Texas-born General by the name of Ignacio Zaragoza, you could say it’s also historically correct to include all the Tex-Mex places as well.
